These are by far my favorite muffins because they are actually healthy! The prep time is about 5-10 minutes and only another 18 minutes to cook.  I generally have these ready in about 30 minutes.  

If you take a look at the ingredients you will see fruit (bananas), coconut oil (healthy fats), almond flour (high protein) and coconut flour (high fiber). There is a nice mix of carbs, protein and fat in this recipe, not to mention the other health benefits.

Here are the ingredients:
•    2 -3 medium super ripe bananas
•    1/3 cup honey
•    2 teaspoons vanilla extract
•    2 eggs
•    1/4 cup refined coconut oil, melted
•    2 cups  almond flour
•    3 tablespoons coconut flour
•    1/3 cup
•    1 teaspoon baking soda
•    1/4 teaspoon salt
•    1 cup chocolate chips

Super easy directions:
1.    Blend all ingredients
2.    Preheat the oven to 350°F and line a muffin tin with 12 muffin liners.
3.    Bake for 18 minutes or until a toothpick inserted in the center comes out clean.
4.    Cool for 5 minutes, then remove and cool for another 10 minutes.
5.    Enjoy!
