If you are like me and love your miso soup, you’ll love how easy this recipe is to make.  It literally takes me 10 minutes max on a bad day! There’s something about a warm cup of soup w/ my sushi rolls that I just can’t get enough of.  (BTW, stay tuned for my next blog on homemade sushi).  Now I don’t allow soy in my diet (99% of soy is genetically modified and even the organic soy isn’t good because of the way it is processed).  So why is miso soup ok? What sets miso apart is that it is FERMENTED.  When you ferment soybeans, you completely alter the nutrients and have a completely different product.  So yes, miso soup is healthy.  You get your probiotics in, it is high in antioxidants, and improves digestion.

Here’s the recipe:

Boil 2 cups of water
Add: ½ cup of frozen peas (or any other vegetable you prefer)
Add: ½ cup of frozen corn
Cook for 4 minutes
Add: 2 tablespoons of miso powder

Add: 1/8 cup of Scallions

Easy enough? Stir and enjoy.
